The 2023 Elevage Blanc is a blend of 66% Sauvignon Gris and 34% Sauvignon Blanc. Notes of waxed lemons, fresh limes, and green apples spill from the glass, followed by hints of dill seed and wet slate. The full-bodied palate delivers an alluringly oily texture and racy backbone to match the intense citrus fruit flavors, finishing long and chalky.

The 2022 Elevage Blanc, 63% Sauvignon Gris and 37% Sauvignon Blanc, leaps with vibrant notes of lemon curd, Bosc pears, and grapefruit followed by hints of lime leaves and wet slate. The medium-bodied palate has soft acidity and loads of savory accents to the abundant citrus and apple flavors, finishing on a white pepper note.

A blend of 71% Sauvignon Gris and 29% Sauvignon Blanc, the 2021 Chimney Rock Elevage Blanc needs a little coaxing to unlock fragrant notes of lime blossoms, lemon curd, fresh grapefruit, and yuzu, plus touches of beeswax and elderflower. Medium to full-bodied, the palate has an impressively satiny texture, with bags of citrus flavors and compelling savory accents, finishing long and beautifully poised.

The 2020 Elevage Blanc is made from 78.5% Sauvignon Gris and 21.5% Sauvignon Blanc. It opens with notes of struck flint, lime leaves, and wet slate over a core of yellow apples, nectarines, and juicy pears. Medium to full-bodied, the palate delivers mouth-filling stone fruit flavors with a satiny texture and soft acidity, finishing on a steely note.
