Maturing into a medium golden color, the 1996 Salon reveals open-knit, alluring scents of butterscotch, dried apricots, pineapple upside-down cake, and preserved lemons, plus wafts of sea spray and praline. The light to medium-bodied palate delivers Salon’s classic razor-fine backbone of acidity with rich, evolved caramelized tropical fruit layers while the bubbles remain exquisitely tiny and persistent. It gives a very long, mineral-tinged finish.

Medium golden colored, the 1982 Salon comes bounding out of the glass with ready-to-go scents of apple butter, crème brûlée, preserved lemons, and candied ginger, with a beguiling undercurrent of jasmine tea. The palate is so light on its feet with a laser-precise backbone of crisp acidity offset by super-intense citrus and spice flavors, while maintaining impressively persistent fine bubbles, finishing very long and minerally. Superb!
